Menu plan week of March 15th

Well, sorry that this blog has been pretty much just my menu posting site these last several weeks.  We’ve got a move coming up in two weeks, so we’ve been keeping busy preparing the condo next door that we’re moving into by painting.  And I’ve been trying to move little bits over here and there as well as organize/ streamline our stuff here (aka throw or give stuff away) so that packing will go more smoothly.  We’ve also been getting estimates for work that needs to be done to our place before we officially put it on the market.  I’ll try to make another post soon with more info.

In the meantime, here’s our menu plan for this week.  🙂

Typical Breakfasts (and lately, it’s been almost all of these items together in one meal.  We’re such breakfast piggies!):

  • Oatmeal
  • Scrambled Eggs
  • Sprouted Toast with Coconut Oil
  • Fresh Fruit
  • Hashbrowns / Potatoes and Onions
  • Turkey Bacon (with no nitrates/nitrites)

Typical Lunches:

  • Loaded Salad
  • Turkey Sandwiches, Carrot and Celery Sticks
  • Leftovers

Typical Snacks (Definitely important with this never-ending appetite of mine):

  • Hard-boiled eggs
  • Smoothies (My favorite these days involves coconut milk and berries.  I’ll try to post it soon.)

Vegetable lasagna (making a double batch and freezing one for later)

Wednesday (Care Group)

Turkey-Stuffed Peppers (I made a double batch last week, so this will come out of the freezer)
