Menu plan week of May 10th

Well, we’re finally done with the old house renovations.   So, I have a bit more room in my schedule to actually think through my weekly menu.  The last few weeks have been pretty thrown-together.  We’ve survived, but we need to get back to a plan to save money, time and my sanity. 🙂

Typical Breakfasts :

Typical Lunches:

  • Loaded Salad
  • Turkey Sandwiches, Carrot and Celery Sticks
  • Leftovers

Typical Snacks (Definitely important with this never-ending appetite of mine):

  • Hard-boiled eggs
  • Smoothies (My favorite these days involves coconut milk and berries.  I’ll try to post it soon.)

And here is the dinner plan:

Monday

Vegetable lasagna (making a double batch and freezing one for later)

Tuesday

Wild-Rice Stuffed Peppers

Wednesday (Care Group)

Leftover lasagna

Thursday

Two-Bean Chili with Avocado

Friday

Chicken Mirabella with Brown Rice

Saturday

Dinner Out with in-laws

Sunday

Leftovers/Breakfast for Dinner/Eat Out
